Cobb Salad

Everyone loves a Classic Cobb Salad.  Applewood smoked bacon, Pt. Reyes Farmstead Blue Cheese, roast turkey, avocado, hard cooked eggs and cherry tomatoes all add their own personality to crisp romaine lettuce.  The secret is to keep the dressing simple, so each ingredient shines.  Here’s our favorite vinaigrette which we keep on hand for just about every kind of greens:

  • 1 garlic clove, finely chopped
  • 2 tablespoons Sam’s Mustard (buy this gem at the Wilderotter Vineyard Tasting Room)
  • 1/4 cup champagne vinegar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • 2 or 3 dashes hot sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup Wilderotter Estate Olive Oil

To the mixing bowl of your food processor, add the garlic, mustard, vinegar, lemon juice, honey, hot sauce, salt, and pepper. Pulse until the mixture is thoroughly combined.  Slowly pour in the olive oil until the dressing is emulsified.   If you make this ahead, bring to room temperature before using.
